yes, i took another trip to denver. i had labor day weekend free, and so i thought why not?! you all know that it’s unlike me to stay home for too long anyway, plus i have a serious love affair with this city. part of the problem is noelle takes me to alllllllll the best places! seriously, noelle?? what are you trying to do, get me addicted to denver?? because it’s kinda working……i’m a little hooked. ready to go back any week now. ;)

{coffee and a bangkok bloody, and then “the sandwich i am”: a soft pretzel pretzel roll filled with scrambled eggs, cheddar cheese and a sausage patty, served with a side of smoked cheddar hollandaise and hash browns. awesome!}
{we both worked remotely that day at noelle’s house… although my office closed at noon, so after noon, i took a nap. :) then later in the day, we met some friends for drinks at the pig & the sprout.}

{then we had brunch at the amazing vital root. “slow fast food” – health-conscious, stylish, with lots of vegan options.}
{i had the BEST raw beet ravioli with cashew cheese, zucchini, heirloom tomato, chive pesto, balsamic reduction & smoked salt. noelle had the coconut charcoal dosa with okinawa sweet potato, swiss chard, peas, asparagus, sambar carrot & mint chutney.}
{i got to see this girl’s new condo… and this is her rooftop!! she has an amazing view of the city and even a mountain view off to the side. noelle, as soon as you move, i’ll be over with rosé every weekend to sit under the string lights.} :)

{WOW, i was totally in bruschetta heaven at this little wine bar, postino, that we ate at for brunch: brie & apples with fig spread; prosciutto with figs & mascarpone; burrata, bacon, arugula & tomato; and roasted peppers with goat cheese. they had a lot more options than just those, but i seriously picked the best ones.} :)
