wanna know what i did for my last spring break of college?
…i spent a little time in lots of places – at home in mansfield; in austin; in dallas; in libertyville, illinois; in houston; and in college station
…i hung out with my family and also visited my friend angela
…but mostly, i ate.
lots and lots of good food.
from start to finish, it was one yummy meal after another. i didn’t plan it like that, but that’s just kind of the way it turned out. and being the self-proclaimed foodie that i am, i’d say it was quite a fabulous way to spend my break!
so to sum up sb 2012, here’s a collection of photos of the treats i indulged in over the course of the week:
- Breakfast for dinner – Dad made his amazing homemade waffles the first night I got in.
- There was one piece of Mom’s apple pie left – the perfect breakfast!
- Mimi took me to lunch at La Madeleine’s. We each got a cup of pasta salad, some fresh bread with jam and butter, and we shared a cup of fruit and a slice of the most delicious coconut cake.
- Tomato Basil Pesto Pasta Salade – our favorite lunch at La Madeleine’s!
- Coconut cake – always a treat! And the perfect amount for two to share.
- My dad is in charge of our church’s fish fry every Friday during Lent. I always get the meal that comes with a baked potato and salad. So tasty!
- The fried Alaskan Pollack that the men’s club makes is a always a hit – I look forward to it every year!
- I went to this popular taco joint in Austin for the first time with my family when we were picking up Mike.
- The Republican tacos – Dad ordered these (what else would he order?!). Grilled jalapeno sausage, shredded cheese, and pico de gallo.
- The Democrat tacos – Mom and I each got one of these. Shredded beef barbacoa topped with fresh avocado, queso fresco, cilantro, onions, and a wedge of lime.
- Deep-fried chocolate chip cookies – for dessert, we split these sinful goodies!
- Brunch at Mac’s. Eggs Blackstone – grilled tomatoes, bacon, and poached eggs on an English muffin with hollandaise sauce. What I didn’t get a picture of was the first course – a plate of fresh fruit, strawberries with whipped cream, and Mac’s legendary gooey mini-cinnamon rolls!
- “The Usual” – when my mom, Mimi, and I go shopping in Dallas, we always go to Nordstrom Cafe, and we always order the same cilantro lime shrimp salad! Every time!
- Cilantro Lime Shrimp Salad – the best salad ever!
- I made this Coca-Cola chocolate cake for Mike’s birthday. It was a hit!
- This rich, not-too-sweet chocolate cake has Coke in both the cake and the frosting.
- In Libertyville, we had lunch at this little bar downtown. Mom and I shared this Caprese Crostini – it brought back great memories of Italy!
- There was a little sushi restaurant right next to our hotel in Libertyville, so we decided to try it for dinner. We got four rolls for the four of us to share, and every one of them was phenomenal. Our favorite was probably the Chicago Cubs roll!
- More sushi! But this time in College Station – I picked some up from How Do You Roll and had a little picnic in my backyard.
- A sushi picnic? Best idea ever
- St. Patty’s Day is the perfect excuse for one of my favorite kinds of ice cream – mint chocolate chip.
anddd now it’s time to hit the gym!
